I just read this chapter today, my first re-kilt of the series. I DID catch that she walked into the room and said "William" and I was confused, wondering if she was announcing the arrival of the baby in her arms, or speaking to somebody. I realized she was talking to her husband. As for her knowing, as with Faith and Brianna, all the babies were born with the Fraser cat-like eyes. William's perhaps not so prominent in the beginning, but she most likely put the pieces together rather quickly when Ellesmere started with his accusations. I am not surprised in the least that Jamie chose to stay. He already lost Faith and Brianna, you could tell as he held young Ian how much that hurt him, and how he longed to be a father. It was the closest that he (thought at the time) would ever be to any of his offspring.

I just read that chapter! It's in Madame Jeanne's establishment where Ian just learns of Jamie's political flyers that he printed (and Young Ian setting fire to them). "You, wi' not an inch on your back unscarred? Wi' the ink scarce dry on your pardon for treason?..." I'm trying to figure out the timeline here. That would have been roughly 10 years later, yeah? But I loved how Ian put it. You're already working to undo something that's been done for you?

I haven't ventured into the Lord John books yet. Is Scottish Prisoner one that I'd need to read the others first? Or could I just dive right into that one?

The Lord John books are written so that you can read them independently - for the most part. There are some references to prior works, especially the short story Custom of the Army (which I recommend anyway). But, my direct answer to your question is to dive into Scottish Prisoner once you want to know more about Jamie in Voyager!
